This weekend we are headed to watch Son 1 and his football team. I have prepared tailgating food and the weather is supposed to be slightly crisp. Ahh, does that not say fall to you?
Here is my menu
Pork Tenderloin with rolls
Monterrey Jack Salsa with chips
Potato and Toasted Corn Salad with Buttermilk Dressing
Cheese Ball (in the shape of a football....so cheesy!)
Peanut Butter Brownies
Here is the Cheese Ball Recipe
8 cups shredded Colby Jack cheese
1 cup mayonnaise
3 tablespoons minced garlic
2 cups chopped toasted pecans, divided
1 cup chopped green olives
1/4 teaspoon red pepper
1/4 teaspoon smoked paprika
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
1 slice white cheese cut into strips to use as the laces on the football
Combine all ingredients except for 1/2 cup of the chopped pecans in a food processor and pulse until blended. You may have to do this in batches. I found I needed to add just a little more mayonnaise as my mixture was a little dry. Form into the shape of a football, top with the remaining pecans and add the white cheese laces. Serve with crackers. This makes a huge amount. If you have a smaller crowd, I say half the recipe. Sorry for my sorry presentation. I already have it packed up for our trip.
Besides getting ready to go out of town for the game I have been decorating for fall. A friend asked me to make a "happy" wreath for her front door and you see the finished product in the photo. I will show more photos next week.
And last before I leave you for the weekend. The photo you see of the messy room is my "lurking project". For reasons too long to list this room became a storage area for way too long. Since it is the largest room upstairs Son 2 has requested we move him into it. So, next week I will begin to decide how we will decorate his new room. I am really excited and I want to make it something he will remember forever.
